• Zefir, a popular Eastern European dessert, originates from 19th-century French culinary techniques of meringue and pastilla. Russian confectioners adapted these methods, using local fruit purees like apples and berries, along with sugar, egg whites, and a gelling agent such as agar-agar, to create a unique, airy treat. Named after the Greek god of the west wind, Zephyrus, "zefir" translates from French as “light breeze.”

  • Zefir is a healthier dessert option due to its lower calorie and fat content, simpler ingredients, and digestibility. However, it should still be enjoyed in moderation because of its high sugar content.

    1. Lower Calorie Content:

    Zefir contains fewer calories compared to many other desserts. One serving of zefir has on average third of the calorie count of a standard cupcake, and half compared to a bar of milk chocolate. This makes zefir a lighter option for those looking to enjoy a sweet treat without consuming too many calories.

  • One piece of Zefir (30-40 grams) contains approximately 80-100 calories depending of the fruit puree used. If compared to a standard cupcake that can contain 250-400 calories, and a bar of milk chocolate has around 210-230 calories, the amount of calories is relatively low.

    • Agar-agar: used to help the Zefir set and maintain its shape. It is plant- based as it is derived from red seaweed.

  • Zefir and marshmallow may seem to have similarities in the way they look, however, components differ significantly. Marshmallow is made using gelatin (animal born gelling agent), corn syrup and corn starch. Zefir, on its end, is made using fruit puree, egg whites and agar (plant-based thickener).

  • Zefir should be stored at room temperature and high humidity without direct sunlight. We recommend storing Zefir for 7 days. Gradually, your Zefir  will dry out and may become covered with a sugar crust on the 7-8th day of storage. The Zefir will be safe to eat, but may lose its fluffiness and softness and become dry and crumbly.

  • 1. Delivery to Miramar/Pembroke Pines is free. Delivery to other locations is possible by courier and it is paid separately. When ordering products over $200 (for parties or events), delivery is free for less than 30 miles.

    2. Pickup is available from the Miramar location and can be coordinated via call/email.

    3. Delivery by USPS to other cities/states is possible, but we cannot guarantee the quality of this delivery.
